Folding a frittata doesn’t make it an Omelette
It all started when we noticed that our omelet had no layers! An omelet is a flat cooked beaten egg folded around the hot filling that is described by the rest of the name. For example, a ham and cheese omelet is flat cooked beaten egg folded around hot ham and cheese. But most of the time, we aren’t being served an omelet anymore, but a folded frittata where the fillings are intermingled with the egg during cooking and then the finished product is folded into the shape of an omelet.
And so our mission began. To find which Denton restaurants cared enough to expect that their cooks prepare omelets correctly.
Over is not over
Next we noticed that if you ordered your eggs over… it didn’t seem to matter which modifier you used. Over easy and over medium and over hard seem to have become randomized. We usually order over medium, just to see if the kitchen is actually paying attention. An over medium egg requires the most attention – it has to be cooked past the easy stage, but interrupted before the hard stage. Most of the time, if we order over medium, we get served an over easy egg. But it’s not just the challenging over medium that gets neglected. My friend loves the easiest to cook – the over hard egg. He reports an equal performance failure on his orders.
Let’s do better, Denton!
While there is wide spread failure, there are some kitchens getting it right. We hope that by telling you where they are, you can avoid being served a sad folded frittata and a wrong viscosity egg.
Fortunately, Eggscellence is not difficult. It is mostly a matter of caring and attention, not of technique. The dream is that restaurant owners and managers will realize how easy it is to achieve this eggscellence and retrain their kitchen staff to do it right. Which will cause all of us to give them more of our money.
